Welcome to the Department of Food Science

The department carries out research in the whole production chain from the composition and quality of the raw material through processing to health value, eating quality and consumer preferences.

Our research is both basic and application-orientated and takes places in close collaboration with the Danish and the international food industry, where the results are transferred into new products and technologies.

The Department of Food Science provides research-based teaching and contributes guidance and research-based advice to the authorities.

Our focus areas are:

  • Differentiation of food regarding health-promoting properties and sensory quality
  • Healthy food – creating well-being
  • Food technology
